Whole30 Turkey Salad Wrap

If you follow my Instagram you may remember me purchasing 3 whole turkeys after Thanksgiving when they were on sale.  Cooking a whole turkey or chicken goes a long way and is especially helpful if you’re trying to prep lots of meals.  With our second round of Whole 30 starting this week my mind has been spinning with new recipe ideas.  For most people I think lunch is the hardest meal to prep so I thought I’d toss out this simple Whole30 Turkey Salad Wrap recipe.

I suggest enjoying a turkey dinner one night and then using leftovers to create this super easy turkey salad.  We used a roaster oven to cook our turkey this time and it turned out perfectly.  You can also easily bake a whole turkey or whole chicken with Tracy’s instructions here.  Side note:  I love this turkey salad recipe, but if you’re looking for a yummy (not so whole30) CHICKEN salad recipe, check this one out from The Pinning Mama.

Whole30 Turkey Salad Wrap

 Ingredients

  • 4 cups chopped turkey 
  • 3/4 cup chopped celery
  • 1/2 cup chopped onion
  • 1/4 cup chopped dried strawberries or cranberries
  • 1 cup homemade mayo
  • 1 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon pepper
  • Romain lettuce for wrapping

Instructions

  1. Combine all ingredients (except the lettuce) in a mixing bowl.
  2. Refrigerate at least 4 hours, best to refrigerate overnight.
  3. Scoop turkey salad onto lettuce, roll up, and enjoy!
