Egg Free Whole30 Sausage Patties

We started a Whole30 Facebook group filled with some FANTASTIC people (which you’re more than welcome to join), and one of the many questions that frequently gets asked is, “What if I can’t do eggs?!”  An egg free Whole30 cycle can be tricky, so we thought we’d create a great protein packed breakfast that was egg free!  These Whole30 Sausage Patties can make the perfect quick breakfast or even snack, especially if you’re on the go.  Make them ahead, freeze, and pull out a few the night before.The perfect Whole30 Breakfast option that's egg free; Whole30 Breakfast Sausage

For this recipe you might just have everything you need already in your fridge!  If not, be sure and check out our Whole30 Grocery List for all of our favorite items we like to keep stocked!

  • 2 T Ghee or other cooking fat of your choice
  • 1/2 cup onion
  • 1.5 t minced garlic
  • 1 cup spinach
  • 1/2 cup shredded carrots
  • 1 cooked sweet potato
  • 1 pound ground pork
  • 1/2 t dried sage
  • 1/4 t Himalayan salt
  • 1/4 t pepper

Begin by preheating your oven to 350 degrees.  Heat one T of Ghee in a skillet.  When it’s hot add in onion, garlic, and carrots.  Cook until onions are translucent and carrots begin to soften.  Next add in your cooked sweet potato and cup of spinach.  Be sure to mash the sweet potato in the skillet and continue to stir all ingredients together until spinach begins to wilt.  In a bowl, combine ground pork, sage, salt and pepper.  Add vegetables to the ground pork, and begin to make your patties.  The sausage patties should be about 1 inch thick. The perfect Whole30 Breakfast option that's egg free; Whole30 Breakfast Sausage

Fry the sausage patties for about 2-4 minutes on each side in your skillet until the patties are brown on each side.  Transfer sausage to a baking sheet and let them finish cooking for 7 minutes in the oven.  These freeze great!  I freeze 3 in a bag and pull out the night before I’m ready to eat!  Enjoy!

Ingredients
