Paleo Berry Cobbler

When Tracy first came up with the idea of a healthy camp series for Stay Fit Mom readers the first thing that popped in my head was paleo cobbler.  Whenever my family goes camping my dad always makes the best dutch oven cobbler.  Now my dad certainly doesn’t make it paleo so I made that my mission.  I have come up with a great paleo berry cobbler recipe you will love!

I am spending the week in Kanarraville, UT with my family.  Now this isn’t exactly camping, but we do all the fun stuff involved with camping.  We do the four wheeling, the hiking, the camp fires, the games, you name it.  The only difference is we get a warm shower and a nice bed to sleep on every night.  I mentioned before that this will be the first time in a few years that all my siblings and the grandkids will all be together again.  Here is the crew of grandkids we have for the week enjoying their DREYER’s SLOW CHURNED Ice Cream!

Kanarre

I created this recipe using a dutch oven pan and cooked it in my oven.  Obviously this would work nicely in a dutch oven over some coals if you are doing “real camping” (wink).

Here are all the ingredients you will need:

Healthier cobbler perfect for camping this summer!

4 cups of berries of your choice.  I used 3 cups of strawberries and 1 cup of blueberries.

1 cup coconut sugar.

2 tablespoons of arrowroot powder.

2 tablespoons of maple syrup.

1 1/2 cups gluten free oats.  I used quick oats, but I think rolled oats would add a nice crunch.

1 cup almond flour.

1 cup butter or ghee.

Instructions:

  1. Preheat oven to 350 degrees.
  2. In a bowl combine berries, 1/2 coconut sugar, and arrowroot powder.
  3. Place your berry mixture in your dutch oven pan and set aside.Paleo Cobbler 4
  4. In a separate bowl combine oats, almond flour, and 1/2 cup coconut sugar, and butter.  This is when you have to get your hands dirty!Paleo Cobbler 3
  5. Sprinkle this mixture over the top of the berries.Delicious gluten free cobbler your whole family will love!
  6. Bake for 45 mins or until the top is golden brown.Delicious gluten free cobbler your whole family will love!
