What better time than now to throw a new recipe out there!? I know a lot of you got new pressure cookers for Christmas, so this one is for you! Rip that shinny new pressure cooker out of its box and give this new recipe a try! I promise, it’s not going to explode on you! What’s not to love about tender, juicy, roast beef!? Put it on some toasted French bread with some melted provolone cheese, dip it in some Au Jus and you’ll understand what I mean.

This recipe requires you to do a tiny bit of prep before dumping everything in and letting it cook. But trust me, it’s quick, painless, and quite fun! To keep this recipe macro friendly I used a leaner cut of beef.  Don’t worry, it still comes out full of flavor and nice and tender! Look for the round eye beef, also know as, eye of round at your local grocery store. I grabbed this 3 pound one at Sam’s club. Any 2-3.5 pound roast is going to yield nearly the same macros so don’t stress about that part. Let it sit for a good 15 minutes. Set your Instant Pot  to saute(or just do this in a pan on the stove if using a slow cooker) and heat up 1 tablespoon of extra virgin olive oil. You’re going to sear the pieces of meat on all sides. Each side will cook about 2-4 minutes.

Now add 32oz. beef broth, 2 tablespoons Worcestershire sauce, and 2 packets Lipton onion soup packets to the pot and bring to a boil. Stir and scrape that goodness off the bottom of the pot with a wooden spoon. Add your meat back into the pot so it’s submerged in the broth. If cooking in the slow cooker, now is when you’d transfer it there from the stovetop. I typically let my Instant Pot naturally release for 30 minutes or so, so I can’t say for sure if the quick release will be okay. I find the quick release tends to make a bit of an unwanted mess anyway so I don’t usually use that option. Once your meat is finished, remove it from the pot so you can shred it. I purchased some fresh French Bread rolls from Walmart for our sandwiches this time around and it was great. I sliced them in half and broiled them on low with some provolone cheese on top for about 3 minutes. But I will say, the Walmart onion poppy seed ciabatta rolls are also amazing paired with this roast beef.

I’m not including the macros for the actual sandwich in MyFitnessPal because most of you wont be using the same bread or amount of cheese. French Dip Sandwiches {Instant Pot or Slow Cooker}

Ingredients
  

  • 3 lbs. Eye of Round Beef
  • 1 Tablespoon Extra Virgin Olive Oil
  • 1 Medium Yellow Onion 200g
  • 2 Packets Lipton Onion Soup Mix
  • 2 Tablespoons Worcestershire Sauce
  • 32 Ounces Beef Broth
  • Salt Pepper, & Garlic Powder

Instructions
 

  • Slice roast and season liberally with salt, pepper, and garlic powder. Set aside for 15 minutes.
  • Turn the pressure cooker to saute. Once hot, ad in the oil. Sear meat on all sides, 2-4 minutes per side. Remove meat from inner pot and set aside.
  • Add in chopped onion and cook until translucent.
  • Pour in beef broth, onion soup mix, and worcestershire sauce and bring to a boil. Scrape up any browned bits on bottom of instant pot.
  • Add roast back into pressure cooker, submerging it in the liquid.
  • Cook on high pressure for 50 minutes.
  • When the cook time has elapsed, allow for pressure to naturally release for 20-30 minutes.
  • Shred and serve on your favorite French bread rolls. Use the extra liquid from your pot (Au Jus) for dipping.
  • Enjoy!
  • Slow Cooker: Sear meat and cook onions on stovetop in a pan. Transfer to slow cooker
