Coconut Almond Butter

Have you ever made your own almond butter? If so, you know how much better it tastes than any store bought brand.  I got a little creative and added some unsweetened coconut flakes and the result is TO DIE FOR.  Coconut Almond Butter is my new obsession these days.  Even better is that it’s Whole30 compliant!  I have been having a scoop of this with apple slices almost daily.
After making my own almond butter I won't ever buy it again. Homemade is SO much better!

I found these cute mason jars at Target and they have been perfect for my nut butters and homemade mayo.  Creamy, delicious almond butter with a hint of coconut flavor. This is so good!I think I have mentioned before that my mom recently got a Vitamix?  Anyhow, I had been dying to test it out and I knew making making coconut almond butter would be super fun! The Vitamix blended up the almonds NO PROBLEM.  I’ve made almond butter in my food processor before but it took about 20 minutes Vs. 2 minutes in the high speed blender.

 Ingredients

Instructions

  1. Roast almonds for 10 min at 350 degrees.
  2. Put almonds, coconut flakes, and sea salt in high speed blender or food processor.
  3. Blend until creamy or the consistency of your liking.
  4. Keep in an air tight container or jar in the refrigerator.

  • 2 cups raw almonds
  • 1/3 cup unsweetened coconut flakes
  • 1/2 teaspoon sea salt

Instructions
 

  • Roast almonds for 10 min at 350 degrees.

    Yum! I had no idea the Vitamix could blend up almond butter in two minutes!?! The last time I made some, my little food processor almost bit the dust and it took 20 minutes

      Haha! Yes, my food processor struggles and even over heats. The Vitamix was a dream!

      Yes keep it redfridgerated.
